The brief

A corporate office in Tbilisi was scaling fast and wanted to offer a daily staff lunch in-house rather than rely on external delivery. The goals were predictable cost, consistent quality, and a menu that would not repeat within a two-week cycle.

What we did

We designed a rotating two-week menu cycle built around local suppliers, with vegetarian and meat options every day and a weekly feature dish. Each day was costed to a per-cover target so the company could forecast monthly spend with confidence.

On the operations side, we set par levels and a two-delivery-per-week supplier rhythm that cut waste without risking stock-outs. A simple inventory log made daily reconciliation quick and visible to the office manager.

Food safety was built in from day one: HACCP-aligned temperature checks, allergen labelling on the service line, and a cleaning schedule tied to the daily checklist.

The result

The canteen launched in six weeks and now serves 180 lunches a day at a stable per-cover cost. Waste dropped against the old delivery model, and the office has a documented hygiene standard it can show to any audit.
